Tikwang’s proposal for OVER:
“Our Culinary Arts Department is creating a new course, Global Cuisine and Sustainability. The aim of this course is to enable students to examine the origins of global cuisine including indigenous, local and global traditions, and ethnic, cultural and other factors that influence global cuisine trends and sustainability in food production operations. Students will develop introductory research and analytical skills which will enable them to plan and produce a range of global cuisine dishes and identify opportunities for improving sustainable practice. We also want to educate the students to be aware about Global Population which will certainly affecting on the foods that we are going to produce. The world food industries are the main contributor of the world pollution. E.g: Foods wrapped in plastic, using unsustainability products and resources, excessive packaging and etc.
We would like some of your books and DVDs to use as teaching resources, to bring an awareness to the students about current issues that world is facing now.”
